With what you've attempted to describe so far, I don't really think you should be promoting yourself at all for getting applications in regard to a game project. Set aside the fact that you want to use AAA engines for it, rather than starting with an easier toolset.
You don't seem prepared at all, nor do you seem like the 'managing/idea'-type person you're sorta giving off.

I know I shouldn't be making applications for such a thing since literally nothing is currently planned, but even so I made it just to see how it would go. I honestly could go one man army for a while and show what I have and let people see it and let them think about applying.
I know I don't seem prepared, but its all going to come together as soon as I get my job and I start getting money. I do have plenty of ideas actually.
Such as a Hack-and-Slash game for LoTR, of course not actually following the real story line due to copyright, but still following the canon. Which yes, I have done some research for this and it is allowed, I will have to do a few things, but other than that its not completely copyrighted.
Or possibly a RPG involving a post apocalyptic world set in after a full scale war inside Europe had happened and nuclear warheads were launched all across the land.(Don't even tell me it sounds like Fallout or some bullshit please)
More ideas will be posted as I come up with them, of course in more detail.

This is common knowledge. You're still not describing anything related to the game itself other than "quests" in mapping, which means some sort of RPG?
Also, "default game models"?
What are you talking about? There is no such thing as "default game models", and if you mean the ones that come with some engines as placeholders for the real content produced by x company (e: cryengine, unreal engine), I really hope you're kidding.

Using placeholders during development is common practice. You can't really go and bitch about it.

During development. It looks like he's referring to the final product.

The final product will not have the base models and materials. As Kurochi said above, its a placeholder.

Yeah, you didn't make that clear in your main post.
Now, I will say, we will be using default game models as well, just so you guys don't expect to make literally every little detail.

just seems like you're using it in the final product.

Yea, sorry about not making that clear. We will not use it in the final project, unless literally its like a can or some foliage texture or tree or something of that inconvenience.
